This simple recipe makes a delicious low-calorie zucchini slice which is perfect for a main meal or a healthy snack. Even the fussiest kids will love it. Contains zucchini, eggs and bacon.
Ingredients
Makes 8 mains servings
- 500 g zucchini
- 1 large onion
- 2 rashers middle bacon, fat trimmed
- 1 cup self-raising flour
- 1 tablespoon canola oil
- 5 eggs
- Salt and pepper to taste
Method
- Coarsely grate unpeeled zucchini.
- Finely chop onion and bacon (removing any bacon fat).
- Combine zucchini, onion, bacon, sifted flour, oil and lightly beaten eggs in a bowl.
- Season to taste.
- Pour into lamington tin lined with baking paper.
- Bake in moderate oven for 30–40 minutes or until browned.
