Monounsaturated fats are fatty acids which have only one double bond between the carbon atoms in the fatty acid molecule (i.e. there is one point in the fatty acid chain where oxygen atoms can attach and oxidate the fatty acid molecule). 

In terms of nutrition, they are considered the healthiest type of fat for human consumption, and are found in plant-based oils (particularly olive oil).
