Glycosylation refers to a metabolic process in which a carbohydrate attaches (binds) to another chemical in the body (often a protein) to form a new molecule. In glycosylation, the attachment occurs in response to a chemical reaction caused by an enzyme, unlike in glycation, which refers to a binding not regulated by an enzyme (also termed non-enzymatic glycosylation).
