Clostridium perfringens is a type of bacteria commonly found in small concentrations in raw meat. It is heat-resistant and can survive at temperatures in excess of 100oC. Bacteria can multiply rapidly at room temperature. Food poisoning can occur in people who consume meat contaminated with high concentrations of C. perfringens.
